Pumpkin Chip Bread

A family favorite

Ingredients

2 cups. pure cane sugar
⅔ cup. water
½ cup. olive oil
4 eggs
3 cups. Miracles Flour Blend
1 tsp. baking soda
1 Tbl. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 ½ tsp. salt
2 tsp. Xanthan gum
2 c. pumpkin, cooked
2 c. mini Semi Sweet Choc. Chips

Baking Instructions

Preheat oven to 350. Combine sugar, oil, eggs, nutmeg, cinnamon, and salt in Stand Mixer. Now add your pumpkin.
Mix dry ingredients in large bowl with whisk and add 1 cup at a time to wet ingredients. Mix until batter is smooth. Add Choc chips.
Pour into 2 greased loaf pans. I use Stoneware and don’t have to grease it.
Bake for 1 hour. Let cook and slide out of pans.
